Salmon & Brown Rice Salad from Pret 03-04-2010

Feelings: I go to Pret for lunch at least once a week, and my new favorite menu item is Salmon and Brown Rice Salad, or what I call "Deconstructed Salmon Rolls or American Chirashi." The neatly packaged salad comes with grilled salmon, brown rice, red cabbage, carrot, cucumber, radish, black olives, edamame, and unfortunately, a ball of cream cheese, which I get rid of as soon as I open the container. It also comes with sweet chili sauce if you want to add some heat or more seasoning. I enjoy the subtle flavor of this salad with a hint of rice vinegar from the brown rice. Overall, it is very fresh, and I can really taste the crunchy texture of the veggies.

There is something so satisfying about eating a deconstructed version of any dish. Many New Yorkers eat burrito bowls instead of burritos. And now, sushi salad instead of actual rolled sushi. Especially for people like me who wouldn't want to make a mess during lunch at work, this is ideal.
